Spinach and Apple Salad



1 pack Baby Spinach, washed
1 Granny Smith apple, halved, cored and thinly sliced
1 Star King / Golden Delicious apple, halved, cored and thinly sliced
¼ cup Red Onion, thinly sliced
handful Pecans, toasted and roughly chopped
handful Raisins
to taste Salt and Freshly ground black pepper
Salad Dressing:
45 ml (3 tblsp) Olive Oil
1,5 tblsp Apple Cider Vinegar
15 ml (1 tblsp) Prepared mustard, eg Dijon
15 ml (1 tblsp) Sugar


  1. In serving bowl, whisk oil, vinegar, mustard, sugar, salt and pepper until thick.
  2. Add apple and onion.
  3. Toss until apples and onions are covered with dressing.
  4. Place spinach on top, then pecans and raisins.
  5. Just before serving, toss.
