Strawberry and Spinach Salad
We recently had an overload of strawberries in our fridge. The ones that Alexander didn’t eat we’ve turned into strawberry ice-cream and jam. I’ve managed to save a few for this strawberry and baby spinach salad. I added some smoked bacon to the salad and together with a lightly toasted ciabata it became a perfect Saturday lunch.
|1 bag||Baby Spinach, pre-washed|
|1 punnet||Strawberries, trimmed and sliced|
|125ml (½ c)||Almonds, sliced and toasted|
|30ml (2 tblsp)||Sunflower Oil|
|30ml (2 tblsp)||Apple Cider Vinegar|
|5ml (1 teasp)||Sugar|
|15ml (1 tblsp)||Sesame Seeds|
|15ml (1 tblsp)||Soy Sauce|
|15ml (1 tblsp)||Orange Juice|
|7.5ml (½ tblsp)||Poppy Seeds|
|2.5ml (½ teasp)||Paprika|
- Whisk together the salad dressing ingredients. Set aside.
- Place the spinach and strawberries in a large bowl. Top with the dressing and toss to combine.
- Top with the almonds just before serving.
