Spinach and Apple Salad
|1 pack||Baby Spinach, washed|
|1||Granny Smith apple, halved, cored and thinly sliced|
|1||Star King / Golden Delicious apple, halved, cored and thinly sliced|
|¼ cup||Red Onion, thinly sliced|
|handful||Pecans, toasted and roughly chopped|
|to taste||Salt and Freshly ground black pepper|
|45 ml (3 tblsp)||Olive Oil|
|1,5 tblsp||Apple Cider Vinegar|
|15 ml (1 tblsp)||Prepared mustard, eg Dijon|
|15 ml (1 tblsp)||Sugar|
- In serving bowl, whisk oil, vinegar, mustard, sugar, salt and pepper until thick.
- Add apple and onion.
- Toss until apples and onions are covered with dressing.
- Place spinach on top, then pecans and raisins.
- Just before serving, toss.
