naanNaan is a staple that goes with some curries. We are so used to rice with our curry, but naan is the most wonderful bread to enjoy and to clean your plate with afterwards.

This recipe is an authentic Indian naan recipe and makes 8.

Cake flour 4 cups
Baking powder 1 teaspoon
Baking soda 1/2 teaspoon
Salt 1 teaspoon
Sugar 2 teaspoon
Egg 1 whole egg
Milk 1 cup
Plain yogurt 2 tablespoons
Vegetable oil 2 tablespoons
Kalonji/ nigella (onion seeds) 2 teaspoons
Butter 2 teaspoons

How we go about it:

  1. Sift the flour, baking powder, baking soda and salt together in a large bowl. Add the sugar, egg, milk, yogurt and 3 tablespoons of water, and knead for about 10 minutes to make a medium-soft dough. Rub the dough with a little oil and cover with a damp cloth. Leave to prove for about an hour in a warm place.
  2. Preheat the oven to 200 Celsius.
  3. Divide the dough into 8 portions and shape into bowls. Apply a little oil to each ball and sprinkle the kalonji on top. Flatten each ball into a 15cm round. Stretch the dough on one side to make a triangular shape. Place the naans on a lightly greased baking sheet and bake for 15 to 18 minutes or until crisp and brown on both sides.
  4. Serve hot, topped with butter.
