Incredible Baked Meatballs

I LOVE Pinterest!!!  When Daniel doesn’t know something, he asks me.  If I don’t know something, I ask Pinterest.

If I have to re-write my CV, I wonder if I can add Pinterest under hobbies?  It’s the best hobby I’ve ever had.  It takes up very little space, I can do it anywhere (if there’s a signal), it calms me, Pinterest motivates me, inspires me and once in a while the family finds something new on their dinner plate.

Your 100% correct, I found the Incredible Baked Meatballs recipe on Pinterest (see original link below).  When I made this last night, on Lara’s request I pan-fried the meatballs instead of baking them.  Before I put them in the oil, I lightly covered the meatballs with flour.  The cooking time was less and they actually looked more attractive but the taste was just as good.

Ingredients

750g Lean minced beef
2 Eggs, beaten
125 ml (1/2 c) Parmesan cheese, grated
250 ml (1 c) Breadcrumbs
1 small Onion, finely chopped or grated
2 – 3 cloves garlic, minced
2,5ml (1/2 teasp) Oregano
5 ml (1 teasp) Salt
Freshly ground black pepper to taste
60 ml (1/4 c) Basil, finely cut

Method:

  1. Mix all the ingredients together and form meatballs.  I normally use the 1/4 c from my measurement set.
  2. Bake for 30 – 40 min at 180’C.

Serve with:  Marinara Sauce and mashed potatoes.
