Greek Chicken Fillets
I normally have 10 to 15 tried-and-tested recipes that I rotate on our menu. At this stage the menu items feel more ‘tired’ than ‘tried’. I do love to try new recipes but when time is few and dinner has to be on the table, I fall back on the recipes I know. It was time to get more variation on our menu so I asked around at my home group for new recipes.
What a conversation starter. The women chatted away about this-and-that recipe, fetching a recipe from Ouma’s kitchen and explaining in the greatest detail, what to do with that chicken. All the excitement got my imagination going. My mouth started to water and I had to swallow a few times.
This Greek Chicken is mouth-watering. A new friend, Sannelize gave me the recipe and I tried it in the LoveCooking Test Kitchen the same evening. My kind of recipe, super-super easy and the family’s taste buds rejoiced. Got a “scoop-the-sauce-out-of-the-pan” thumbs-up from Ben, who has a very conservative (12-year-old) pallet.
|250ml (1 c)||Natural Yoghurt|
|1 clove||Garlic, crushed|
|5ml (1 teasp)||Fresh Oregano|
|2,5ml (1/2 teasp)||Sugar|
|8||Chicken breast fillets|
|125ml (1/2 c)||Crumbed Feta Cheese|
|Salt and Pepper to taste|
- Mix all the ingredients, except chicken and feta cheese, in a large bowl.
- Add chicken and marinate for about 30 minutes. (This is not essential if you’re short of time).
- Pre-heat grill.
- Place chicken on a baking sheet and grill for 10 minutes.
- Turn, brush with extra marinade and sprinkle with feta cheese. Grill for a further 5 minutes, or until cooked through.
