Couscous with Mint and Lemon
Last week I served this lemon and mint couscous with Moroccan spiced mince. I think the couscous was the star on my plate with a subtle lemon and mint flavour.
|2 lemons for zest||Grated zest of 2 lemons|
|4 tbsp||Fresh Mint (out of the garden), chopped|
|50 gr||Unsalted cashews, toasted under the grill. They’ll turn golden and shiny.|
- Make up the couscous following the packet instructions – it will take about 450ml boiling water to give it a nice fluffy texture.
- Fork through the lemon zest and mint. Season to taste.
- Scatter with the cashews.
