Couscous with Mint and Lemon

couscous-2Last week I served this lemon and mint couscous with Moroccan spiced mince.  I think the couscous was the star on my plate with a subtle lemon and mint flavour.


280 gr Couscous
2 lemons for zest Grated zest of 2 lemons
4 tbsp Fresh Mint (out of the garden), chopped
50 gr Unsalted cashews, toasted under the grill. They’ll turn golden and shiny.


  1. Make up the couscous following the packet instructions – it will take about 450ml boiling water to give it a nice fluffy texture.
  2. Fork through the lemon zest and mint. Season to taste.
  3. Scatter with the cashews.
