I’ve tried to mix the coconut macaroons manually. I looked at the ingredients in the mixing bowl and thought, no electrical mixer needed, this is easy. After the third circular movement my arm just couldn’t go any further. I have a suspicion that my age and lack of exercise is creeping up on me. I can’t recall how the inside of the gym looks like. I had to transfer the batter to my trusty Kenwood mixer.
|5 c||Flaked coconut|
|160 ml (⅔ c)||All purpose flour|
|1 can (385 gr)||Sweetened condensed milk|
|10 ml (2 teasp)||Vanilla extract|
|30 ml (2 tblsp)||Milk|
- Preheat oven to 180°C.
- In a small bowl, combine the coconut, flour and salt.
- Add milk and vanilla; mix well (batter will be stiff).
- Drop by tablespoonfuls onto a greased baking sheet.
- Bake 20-25 minutes or until golden brown. Remove to wire racks.
