Coconut Macaroons

macaroons-2I’ve tried to mix the coconut macaroons manually. I looked at the ingredients in the mixing bowl and thought, no electrical mixer needed, this is easy.  After the third circular movement my arm just couldn’t go any further.  I have a suspicion that my age and lack of exercise is creeping up on me.  I can’t recall how the inside of the gym looks like.  I had to transfer the batter to my trusty Kenwood mixer.

Ingredients:

 5 c Flaked coconut
160 ml (⅔ c) All purpose flour
¼ teasp Salt
1 can (385 gr) Sweetened condensed milk
10 ml (2 teasp) Vanilla extract
30 ml (2 tblsp) Milk

Method:

  1. Preheat oven to 180°C.
  2. In a small bowl, combine the coconut, flour and salt.
  3. Add milk and vanilla; mix well (batter will be stiff).
  4. Drop by tablespoonfuls onto a greased baking sheet.
  5. Bake 20-25 minutes or until golden brown. Remove to wire racks.
