Chickpea Fritters
A healthy lunch box snack or a delicious light lunch with salad.

  1. 1 can Chickpeas, rinsed and drained
  2. 1/2 c (125ml) Onion, thinly sliced
  3. 1/3c (80ml) Cilantro, chopped
  4. 1/2c (125ml) Flour
  5. 1 Egg
  6. 1/2 teasp (2.5ml) Salt
  7. Olive Oil
  8. Salad and lemon wedges, for serving.
  1. In a food processor, pulse together chickpeas, onions and cilantro until a coarse paste forms.
  2. Pulse in flour, egg, and salt.
  3. Heat 1/4 inch olive oil in a large skillet over medium high.
  4. Add chickpea mixture to skillet, 1/4 cup at a time, pressing to form patties.
  5. Cook until golden brown on both sides, turning once, 4 to 5 minutes.
  6. Serve with salad and lemon wedges.
  1. This is a versatile base recipe for chickpea fritters.
  2. You can replace the onion with eg. red onions, spring onion etc. Substitute the cilantro with any raw vegetable. I didn't have cilantro and used red and green pepper instead.
  3. I enjoy stronger flavours and this basic recipe needs a bit more zing according to my palette. Add a selection of herbs that suit your families taste.
