For our Chai Tea we use Chai Masala that we’ve made in advance. In India they drink this as a very sweet tea. I’ve toned the sugar down a bit to avoid going into hyper drive.
|400ml (2 c)||Milk|
|400ml (2 c)||Water|
|2||Tea bags black tea or rooibos|
|2.5ml (½ teasp)||Chai Masala|
|20ml (4 teasp)||Sugar|
- Put the milk and water in a saucepan. Place over high heat and bring to a boil.
- Lower the heat to medium, add the tea and Chai Masala. Boil for 1 minute.
- Add the sugar. When it comes to a boil again, lower the heat to low and simmer for 2 – 3 minutes.
- Strain intoindividual cups and serve piping hot.
