Chai Tea

chai-tea-with-milk-2For our  Chai Tea we use Chai Masala that we’ve made in advance.  In India they drink this as a very sweet tea.  I’ve toned the sugar down a bit to avoid going into hyper drive.


400ml (2 c) Milk
400ml (2 c) Water
2 Tea bags black tea or rooibos
2.5ml (½ teasp) Chai Masala
20ml (4 teasp) Sugar


  1. Put the milk and water in a saucepan.  Place over high heat and bring to a boil.
  2. Lower the heat to medium, add the tea and Chai Masala.  Boil for 1 minute.
  3. Add the sugar.  When it comes to a boil again, lower the heat to low and simmer for 2 – 3 minutes.
  4. Strain intoindividual cups and serve piping hot.
